Koshari minus the chickpeas

Ingredients:

  • 1 + 1/2 cup Egyptian rice (or 1 cup basmati + 1 cup Egyptian rice), washed
  • 1 cup green lentils, washed
  • 1 clove of garlic
  • 1 tsp cumin powder
  • 1 cup water
  • 1 tbsp olive oil
  • 2 tsp salt, 1/2 tsp black pepper, 1 tsp cumin, 1/2 tsp 7 spice

For salsa:

  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 2 green chili’s , chopped
  • 1 large tomato, chopped
  • Salt and chili flakes

Extras:

  • Pasta of choice, cooked
  • Thinly Sliced red onions, fried .

Instructions:

1. For the rice: In a saucepan, add in garlic, 1 tsp cumin powder, green lentils and water. Let it boil for 20 minutes or till lentils are eatable. Add in olive oil, spices, then let it simmer for a minute. Add in rice along with 2 cups of water. Let it cook. (Till water evaporates)

2. For the sauce: In a saucepan, add in garlic and olive oil. Sauté till fragrant then add in tomato paste. After stirring for a minute, add in chopped onions & green chili and let it simmer with salt and chili flakes. Set aside.

3. For onions: in a deep pan, heat vegetable oil for 10-15 mins (or till hot) and add in thinly sliced red onions. Let it fry till golden then place of kitchen paper to reduce excess oil.

4. On serving plate, place (in order) cooked rice, pasta, fried onions then finally sauce if desired and enjoy 🥰
