Oatmeal Buttermilk Pancakes

Description

An overnight twist on regular pancakes!

Ingredients


  • 2 cups Oats, Instant Or Not, Doesn’t Matter
  • 2 cups Buttermilk
  • ½ cups Whole Wheat Flour
  • 1 Tablespoon Brown Sugar
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • ¾ sticks Butter
  • 2 whole Eggs

Preparation

The night before you want to make the pancakes, mix the oats and buttermilk together in a large bowl, cover with plastic wrap and refrigerate overnight.


The next morning, take the bowl out and set it aside. Mix together the flour, brown sugar, soda, powder and salt in another small bowl and set aside. Melt the butter in the microwave. Then add the 2 eggs and beat lightly. Add the butter mixture to the oats mixture and mix well. Then add the flour mixture and stir until well blended.

Then just make the pancakes on your nonstick skillet or griddle as you would make normal pancakes over medium heat. No need to grease the griddle ad the pancakes have enough butter in them that they won’t stick.

I serve mine with warm apple butter.
